SOUS-VIDE: Supermarket Secrets spotlight on sous-vide, and Sirane’s packaging could be the perfect solution

TV's Gregg Wallace

THE BBC’s Supermarket Secrets show put sous-vide packaging under the spotlight this week – as producers and retailers begin to realise just how good the meat tastes….

And one product from Sirane could be a perfect fit with this growing trend – sous-vide packaging that can subsequently be oven-roasted without opening the pack.

BBC One’s show saw presenter Gregg Wallace visit a Scottish producer looking to perfect a ‘ready to cook’ product: a Moroccan-spiced joint of lamb cooked sous-vide – the meat could simply be ‘finished’ by the consumer in a fraction of the normal cooking time.

Simon Balderson, Sirane MD, said: “Our Siralon Sous-Vide packaging fits perfectly with any producers or retailers looking to develop this type of product. In fact, it’s won awards overseas which is testament to just how good the food cooked this way tastes.

“This is a nylon sous-vide pack, which means the product can be cooked sous-vide, shipped to store for sale, and subsequently cooked – all in the same pack, without the need to open it. Handling is kept to an absolute minimum, while taste and flavour is maximum.”

The Sira-CookTM PA Sous-Vide bag ‘combining sous vide with roasting’ earned a food company a top award at the Australian Foodmagazine awards a few years ago.

Grab and Go Hot Country Roasts by Creative Food Solutions – which is supplied into supermarkets including Woolworths - won the Meat and Smallgoods category.

Jeremy said: “Creative Food Solutions truly managed to take advantage of our Sira-CookTM PA Sous-Vide bag to create a great product which deservedly bagged an award.

“We’re sure there’s plenty of opportunity for producers here in the UK to develop similar products which will prove just as successful, as it’s a really good concept.

“Their cuts of meat were bagged, vacuum sealed and slowly cooked sous-vide style for up to 12 hours. The product was then heated for around hour in store – leaving the customer with a product they simply need to brown in the oven for a short time once they return home before serving up a succulent tasty meal that would have taken hours.

“Vac-packing the meat allowed Creative Food Solutions to offer 28 days shelf-life.

“This is exactly the sort of solution that the producer on Supermarket Secrets was developing – and one which could become commonplace as sous-vide continues to gain momentum.

“The tests on the TV show demonstrated just how good food cooked sous-vide tastes. It is remarkably tender, and it really is almost ‘melt in your mouth’ for consumers.”

Creative Food Solutions' Grab and Go Hot Country Roasts are available in three flavours: Australian Beef, Lamb and Pork - all ethically raised. The boneless roasts are rubbed with a marinade and herbs prior to cooking then pan seared to seal in the juices.

“The result,” said Jeremy, “is a consistently tender and moist roast. This is an ideal product for Sunday lunches, buffets, bistros and functions. The premium roast range can also be finely sliced and served as cold cuts with salads and for gourmet sandwiches.

“It could be used in mass catering just as effectively as single roasts for the family. Another major advantage is that it reduces the need for the product to be handled. The material is also absorbent, reducing excess fat and allowing the product to crisp.”

THINKING-COOKING: Retail range now available in the Baltic States

Sirane's Thinking-Cooking range is now available in Lithuania, Latvia and Estonia

SIRANE’S Thinking-Cooking range is now on sale in the Baltic States – with customers of supermarket chain Maxima enjoying the benefits of our popular retail range.

Our Thinking-Cooking range has been designed around the needs of busy people, who want quality products and solutions which help them make quick and easy food without sacrificing on the taste and the flavour. In short, they want the best of both worlds…

And Sirane’s distributor for the Baltics, Europola, has taken the Thinking-Cooking concept to offer the ‘best of both worlds’ to consumers in Lithuania, Latvia and Estonia.

Jeremy Haydn-Davies, Sirane sales director, said: “Thinking-Cooking is a really interesting product range, and it is great that Europola saw the opportunity to take it to market in the Baltics. We understand the range has been very well received – which comes as no surprise.

“These are products that people like to keep in their kitchen for when they need them. Products that make a difference, whether it be keeping cleaning and mess to a minimum, making it easier to cook, or even extending the shelf-life of fresh produce.”

Maxima is stocking oven/microwave steam-cooking bags, oven/BBQ bags, nylon roasting bags, deli-bags and breathable bags for extending the shelf-life of fresh produce. We also offer absorbent oven-grill liners, slow-cooker liners and potato-bakers in the UK.

Europola are also about to open a web-shop, allowing users in the region to buy direct.

The BBQ/Oven bag is available in packs of three, each bag 220x300mm. Additional sizes are available on request for anyone interested in stocking larger sized bags. The bags are non-stick, making them ideal for fish which would otherwise stick to the bag.

The Steam-Cooking Bag is an oven or microwave cooking bag, which seals in all the juices and flavours and allows healthy eating and fast food to be combined. They can be used for seafood, poultry and vegetables… whether it is steamed fish or asparagus with a flavoured butter, chicken with a glaze or buttered new potatoes, they come out full of flavour.

Whether it is for ease of use, flavour, portion control or health reasons, the Steam-Cooking bag is a popular choice – something customers definitely want in their kitchen drawer.

These two items are also selling well in the US, where our distribution partners Elkay Plastics are selling them both online and in stores under their popular Ready. Chef. Go brand.

Nylon Roasting Bags are available in two different sizes – ideal for chickens and turkeys - and will crisp up the bird perfectly, stop it from drying out, and significantly reduce cooking times.

Our Incredible Fruit & Veg Bags are just that – incredible. They allow customers to get many extra days shelf-life on their fresh produce and reduce significantly the amount of fruit and vegetables they are forced to throw away each week. Our Deli-Fresh food bags also offer significant shelf-life extension on items such as cakes, pasties and cold meats.

Jeremy Haydn-Davies added: “Europola has done a fantastic job introducing Thinking-Cooking to the market in the Baltics, and the feedback is very promising. Customers are enjoying using the products and sales are definitely showing an upward trend.

“The experience in the Baltics demonstrates how products like Thinking-Cooking can fit into most markets, and we’d love to hear from people interested in introducing the range into other parts of Europe and indeed further afield – if you’re interested, get in touch.”

Email mark.lingard@sirane.com if you would like more information on the range. The full range can be seen – and purchased in the UK – from www.thinking-cooking.com. Products in the US can be seen (and bought) from www.readychefgobags.com. For more information on Europola, visit www.europola.eu
